Lani's Lentil Salad

Salad
1 cup dried lentils
3 cups water
1 cup chopped watercress
3 ounces Feta cheese, finely chopped
(if keeping fats to a minimum, reduce to 1 oz. Feta cheese)

Dressing
2 Tbsp. vegetable or chicken broth, fat removed
1 Tbsp. extra virgin olive oil
3 Tbsp. premium red wine vinegar
1/4 tsp. coarsely ground black pepper (season to taste)
1/2 tsp. oregano
1/4 tsp. sea salt (optional, I eliminate the salt whenever possible, I find that the vinegar provides sufficient salt)

If you are preparing lentils for the first time, beware that dried lentils may have small pebbles in the package, so spread them out on a flat surface before cooking to remove any of these little tooth-breakers. Place lentils in a saucepan, cover with 3 cups of water and bring to a boil. Immediately remove from high heat and simmer gently for 45 minutes, or until just tender. Don't overcook...lentils should not be mushy...skins should not be broken. Drain well and cool thoroughly.

Mix dressing ingredients together in a blender and toss gently with lentils. Add Feta cheese and watercress and toss lightly to combine thoroughly. Serve chilled. Serves 6 small portions or three large portions.

The holidays are just around the corner, and many of us will find it harder to stay with that healthy diet. People living in the colder states can hide in their winter coats, but those of us in the warmer states will still be in shorts. With relatives visiting, shopping and cooking, time is going to be tight.

As we all know, any exercise is better than no exercise at all; but it is exercise added to healthy eating habits that will keep us feeling and looking great. Here are some ways to squeeze in a little exercise: when shopping, park a little farther away and walk or take a friend or family member for a walk. It's a great way to visit and get some fresh air. Walking is rated as the #1 cardiovascular exercise. These are just some of the simple things to do for those people who cannot, or don't want to get to the gym.

People who are into weight training might want to try a total body workout three times a week. This will take about an hour and is a great change of pace. A total body workout entails 1 exercise per body part, with 2 set of 15-20 reps. Use a weight that becomes difficult toward the last 3-4 reps, but not one that causes you to use improper form.
