Outrageous Tofu Pizza

Chop in cubes:

1 red pepper
1 yellow pepper
1 bell pepper
1 medium onion
2 cloves of garlic
1 small ginger root
Tofu (crumbled)
Salt and pepper to taste
1 can chopped tomatoes (drained)
Small jar of pizza sauce
1 Boboli bread or other pizza crust
1 tsp olive oil
Package grated Italian cheese or soy cheese

In a skillet mix together the olive oil, salt, pepper, onion, garlic and ginger. Add the tofu of your choosing and brown. Add the tomatoes. When all ingredients are warmed thoroughly, set aside. On your crust, slather on the pizza sauce and pile high the tofu combination. Next, add the vegetables followed by the cheese.

Bake in the oven according to the directions for your pizza crust. Slice, serve and watch out!
